Trying to use up the free meat I was given

The stuff the woman brought over is mostly hotdogs, bologna, bacon ... Stuff I don't tend to buy or use much.

Well, I have two pounds of bologna so I thought of using it for an upcoming supper. This recipe looks quite SUPPERish. http://www.food.com/recipe/eggs-in-bologna-cups-93085

BTW - Praising God that my year with 1/3 + 20% decrease in food stamps will end in July. We've made it this far. I am pretty sure the 20% decrease will continue for a while but I will be getting more foodstamps. It's getting tough but I really do see a light at the end of the tunnel.

I very seldom ever buy bologna. The only way I like it is in fried bologna sandwiches. Yum!!

That would be like torture to me--all of them are heavily processed, high in nitrates, sodium, and lots of other bad things, and I wouldn't use them for free. That may sound horrible, but I'd rather have us not eat a meal than eat those things (well, we'd still have veggies to eat). Being blunt, bologna has no nutritional value except lots of fat. Hot dogs have a little protein, but you could get twice that amount in a glass of skim milk. Make sure you really want to use those free foods (and I use the term 'food' loosely).

I know that is not what you asked, but as someone who taught nutrition and who really cares about you, I had to say it. :hug

PS--If these are all uncured, non-nitrate, low fat, low sodium meats, then forget what I said. I do feed my family organic, uncured hot dogs as a treat.

The recipe looks...interesting. Let me know how it turns out and if it's worth trying again.

I like a good fried bologna sandwich, too, Sherry! Two of my kids will eat them, the other two would sooner die. (No comment, Vicki!)

I'm glad your year is almost over; I'm sure it's been a long one!

Confessions: we would have no trouble eating the things you were given. the hot dogs would have to be over a campfire, but the bacon would be easy, and half the family would work through frying up the bologna. Hubby would get cold bologna sandwiches in his lunch box, but he'd complain. He'd eat them, but he'd complain. ;)

I never buy bologna -- due to having had cold bologna sandwiches much, much too often while on furlough as a child. The smell reminds me of eternal, sweaty car rides, whining siblings, and short-tempered parents just barely holding it together.

My family would love those things. *I* am the one who won't buy them nor let them eat that stuff if they are in my home. :greengrin
