I want to make sure I cover all my bases and give my girls the best education I can
We all want that, but please--number one rule is to R-E-L-A-X. Have fun (sounds like you already are having fun). Don't try to do too much. In fact, with our sixth/last child, we didn't start really doing much until 4th grade. She's in high school now (homeschooling). By the way, we're in our 23rd year of homeschooling and only have one child left.
I still love looking at homeschool stuff, however.All of us love buying and looking at curriculum, so have fun! And ask many questions--we love to answer them.
RELAX. The truth is, as their mother, you care way more about your children's education than a paid employee does. That's not a diss on teachers, it's just the way I see it. When you start freaking out, thinking, "I can't do this, I am going to mess them up forever..." that is what usually brings people to put their kids back in school. I did that twice (or was it three times?) before I found this place and these wonderful ladies and homeschooling became our LIFESTYLE, meaning we are in it for the long haul no matter what. 
Second, research all there is to offer and there is LOTS. It can be overwhelming so after looking at samples and researching, take a break if you get tired or overwhelmed. It can be hard to do, but you don't want to make yourself crazy over choosing the PERFECT thing, because, more than likely, you will switch around in the first few years until you find something you like. And maybe, even in the laters years as your children's needs change or your circumstances change.
