Green Beans with Lemon Butter
Ginger Carrots
Warm Orzo salad
Salt Potatoes
Simple Summer salad( different color peppers,tomatoes ,onions cukes with s & p and lemon and olive oil
dessert - Eclair cake
Everything was easy to make and totally delicious!!!!!!!!

The salt potatoes are easy.....
Just get some small new potatoes... put them in boiling water with some salt ( I would est. 5 pounds - 1/2 cup, realizing 5lbs new potatoes there are a quite a few....) boil till ready , make sure you have some nice melted butter to dip in, some people just pop in mouth , some mash them up like a baked...




The Warm orzo Salad is a favorite easy to make but the flavors all together are wonderful!

Warm Orzo Salad
Serves six

This is a salad and not a sautéed pasta dish, so the ingredients should be warmed but not cooked thoroughly. You should be able to distinguish all of the ingredients in the finished product.

4 cups cooked orzo pasta (cooled and lightly oiled)
2 tablespoons extra virgin olive oil
¼ cup pitted kalamata olives, roughly chopped
2 tablespoons capers, roughly chopped
1 tablespoon garlic, chopped
½ cup diced tomatoes
2 tablespoons chopped Italian parsley
2 cups packed fresh spinach
½ cup good quality feta cheese
Kosher salt and fresh ground black pepper
In a large sauté pan, combine the oil, olives, capers, garlic, tomatoes, and parsley. Generously sprinkle with salt and pepper. Cover with the spinach and cook on high until the spinach shows signs of wilting. Add the cooked orzo to the pan and toss once or twice, just so the ingredients intermingle. Distribute the feta on top and put into a warm oven for a few minutes. Turn out onto a warmed serving platter.

That sounds fabulous Lily! Thank you for the Orzo salad recipe. My guess is the leftovers would be very tasty cold.

My mother used to make salt potatoes out of the new potatoes straight from the garden. She would also make them and then add butter and chopped parsley for "parsley potatoes" which is one of my own family's favorite dishes. You can make parsley potatoes with mature potatoes by peeling and quartering them.

Definitely trying the orzo salad recipe! It sounds delicious! I also have some artichoke hearts and sundried tomatoes that would probably taste great in it.
