grilling veggies?

Postby RobinS » Sun Jul 03, 2011 8:03 pm

I'm going to a 4th of July barbecue tomorrow. I'm supposed to bring something (exactly what has been unspecified). So far, people are bringing a lot of different stuff, but no veggies. So I was thinking we could maybe grill some veggies.

I could just do corn (which is the only sort of veggie I've ever grilled in my life) but I would prefer to do something else. Suggestions? I don't want this to be ho-hum.

I'm sorry I didn't see this in time, but you can do the veggies ME suggested, brushed with olive oil and sprinkled with whatever herbs and seasonings sound good. Or marinate them in Italian dressing for 20-30 minutes before grilling. I usually use a special grill thingie (that's the technical term, of course!) that doesn't allow smaller pieces to fall through.

I also grill thick onion slices right along with the other stuff.
