   <title>Overdone Cookies</title>

   <description><![CDATA[Somehow I managed to overbake three trays of choco chip cookies the other day. Other than eating them crunchy, does anybody have any ideas of something I could do with them?<br /><br />They're not burned, just brown and crunchy, rather than soft and chewy.<br /><br />Now that the soft and chewy ones are gone, eating the crunchy ones isn't a huge problem, but I was wanting something special to do with them, with just whatever I have on hand.<br /><br />I've got vanilla ice cream; I could crunch them up and make "blizzards" I suppose.<br /><br />What about making a cookie crust? I think with butter? What could I put in the cookie crust? Maybe I should freeze them until I feel more creative.<br /><br />Or just keep eating crunchy cookies....]]></description>

   <title>Need Eggplant help</title>

   <description><![CDATA[Tonight I made Eggplant Parmesan.&nbsp;&nbsp;DD loves the stuff and didn't call it bad but neither was it good.&nbsp;&nbsp;I like it but don't love it so I would say it was terrible.<br /><br />Here is the recipe I used:<br /><br />3 eggplant, peeled and thinly sliced<br />2 eggs beaten<br />4 c Italian season bread crumbs<br />1 (16 oz) pkg mozzarella cheese shredded and divided<br />1/2 c grated Parmesan cheese<br />1/2 t dried basil<br /><br />Directions:<br /><br />1. Preheat oven to 350 degrees F<br />2.&nbsp;&nbsp;Dip eggplant slices in egg, then in bread crumbs.&nbsp;&nbsp;Place in a single layer on a baking sheet.&nbsp;&nbsp;Bake for 5 minutes on each side<br />3. In a 9 x 13 in. dish spread spaghetti sauce to cover the bottom.&nbsp;&nbsp;Place a layer of eggplant slices in the sauce.&nbsp;&nbsp;Sprinkle with mozzarella and Parmesan cheeses.&nbsp;&nbsp;Repeat with remaining ingredients, ending with the cheeses.&nbsp;&nbsp;Sprinkle basil on top.<br />4.&nbsp;&nbsp;Bake for 35 minutes or until golden brown.<br /><br />Okay, I see I forgot the basil and that might of been why it wasn't very flavorful but that wasn't my main problem.&nbsp;&nbsp;The eggplant was tough.&nbsp;&nbsp;Although it wasn't crunchy, it was close.&nbsp;&nbsp;<br /><br />Did I not bake it enough?-see instructions to bake 5 minutes on each side -or did it need longer than 35 minutes even though it was golden brown.<br />I sliced the pieces about 1/4 to 1/8 in thick--was that too thick.&nbsp;&nbsp;Should they have been "wafer" thin?<br />Do I need a better recipe?<br />Did I not pick good eggplants?<br />While proofing this I saw where it said to use a baking sheet which I did but it was an airbake pan.&nbsp;&nbsp;I know that gives a different result with cookies --do you think that was the problem?<br /><br /><br />]]></description>
