Ok, I just made that up today. But every Friday dh and his friends go to Starbucks before work and I try to have some homemade goodies for him to share. That's how I tweeked my cookie recipe. I made them pumpkin bread. Today I made my banana bread so dh can take it. Of course I make some for home too so everyone here has a little treat to either have for breakfast or with lunch too.
I think next week maybe I'll try to make some sweet scones. I've never made scones before.
1 1/2 c. Flour 2 Tb. sugar (+1 Tb for later) 1 1/2 tsp. baking powder 1/4 tsp. baking soda 1/4 tsp. salt 1 1/2 tsp. grated lemon zest 4 Tb. chilled butter (cut up) 1/2 c. currants (or raisins if you must) 1/2 c. buttermilk 1 separated egg
preheat oven 375. sift together first 5 ingredients add lemon zest cut in butter; stir in currants mix egg yolk w/buttermilk make a well in the dry ingredients mix wet w/dry just until combined. don't over mix! form into 9 or 10 muffins brush w/egg white sprinkle w/ remaining sugar bake 12-15 mins (until golden)
(I think the last time I made these I sprinkled a little bit of flour on the currants and swished them around in my hands before mixing them in. This stopped them from sticking to one another and therefore less clumping)
