Here's a dish that my family goes bonkers over. We don't have it often, only when tortilla chips are on sale...

Robin's Bean Dip

refried beans (however much you need for your family)
corn
tomatoes
cheddar cheese

optional ingredients:
avocadoes
salsa
sour cream

Mix all the ingredients in a large casserole and microwave for 5 minutes or so, until heated through. (Cooking time will depend on how much you are making.) Serve with tortilla chips for dipping. Optional ingredients are served on the side.

This doesn't sound like a "real" meal, but it is very filling! I use about 6 cups cooked beans to make my refried beans...makes enough dip for one dinner and one "leftovers" lunch. This reheats well and is also good cold. It's great for family reunions, etc. Oh, and it keeps for a long time: when I went to visit my parents, I left dh a big bowl of this and that was all he ate that week!
