Blueberry Corn Cakes 1 C. flour
1 C. corn meal
1/2 tsp. salt
2 T. baking powder
3 T. sugar
3 T. vegetable oil
1 beaten egg
1 1/2 C. orange juice
1 C. blueberriesMix all of the preceding ingredients together. Pour 1/4 cupfuls onto hot griddle. Cook until edges are dry. Turn; cook until golden brown. Makes 8 cakes.
