"Best Ever Zucchini Bread"
I found this old newspaper clipping recipe and have made this twice this month already from frozen zuch. I had. I will put the changes I made in it in parenthesis.
3 eggs
1 cup salad oil (olive oil)
1 cup white sugar (3/4 cup honey)
1 cup brown sugar
2 tsp maple flavoring (vanilla)
2 cups unpeeled, coarsely-shredded zucchini
2 1/2 cups flour
1/2 cup wheat germ (I omitted this)
2 tsp. baking soda
2 tsp. salt
1/2 tsp. baking powder
2 tsp. pumpkin pie spice (I used lots of cinnamon)
1 orange ground complete with rind
1/2 cup raisins
1/2 cup walnuts, chopped (for the raisins and walnuts I just used a mixture of dried fruit I had on hand and sunflower seeds)
4 tbsp. sunflower nutsMix eggs to blend, add oil, sugar and maple flavoring: beat well. Stir in zucchini. Add flour, wheat germ, and all other dry ingredients; then ground orange, raisins and walnuts. Stir until blended. put into two large greased loaf pans. Sprinkle each loaf with 2 tbsp. of sunflower seeds. Bake at 350 degrees for 1 hour or a little more. Test with toothpick. Let cool in pans for 10 minutes. Then turn out. Yummy. Hope you enjoy.
