One trick I have used for having more tender chicken is after they have been butchered, letting them sit in the refrigerator for at least a day before freezing or using. An older farmer lady told me this trick and said it also worked on tougher birds...I guess it allows the muscles in the birds to relax some. You might want to let them sit for two days in fridge before cooking.
