"Probably my favorite sandwich to make at home"
is my own version of egg salad with alfalfa sprouts and thinly sliced radishes on pumpernickle or rye.
Lori's Superdeeduper Egg Salad12 eggs, hardcooked
8 oz. cream cheese, softened
2 t. mustard, optional
1/4 t. seasoned salt
1 t. dried dill weed
sour cream or milk, if neededPeel eggs and chop finely. Set aside. Beat cream cheese, mustard, salt, and dill with a mixer until creamy. Blend in chopped eggs. Add a bit of sour cream or milk if the mixture is too thick to spread on bread easily. Do not add any if the mixture will be refrigerated to use later -- it will be softer after a few hours in the fridge. Serves our family with enough left-overs for Dad's lunch the next day -- there are five us and we like to eat -- you figure it out...
