
Pick-your-ingredients Marinade

Here's an easy marinade I made up. I'm guessing at amounts, as I just toss ingredients together until it looks good!
Pick-your-ingredients Marinade1 c. olive oil
1/2 c. fresh or bottled lemon juice, lime juice, orange juice, red wine vinegar, or cider vinegar
3-4 garlic cloves, minced
1 onion, chopped, 3-4 scallions, sliced, or 2-3 shallots, chopped
1-2 t. salt
1 t. freshly ground black pepper
herbs -- choose 1 or a combination of the following -- for fresh herbs, use 1/4-1/2 c., chopped finely -- for dried herbs, use 1-2 T., crushed:
cilantro
basil
thyme
dill
oregano
sage
mint
flat, italian parsley
rosemaryMix together and marinate meat in the refrigerator.
If you like cilantro, the lime/cilantro is great! I like a combination of basil, thyme, and dill with lemon juice very much.
