"Super bowl Bruschetta"
Makes: 12 servings
4 to 6 cups chopped, seeded, firm tomatoes
2 tablespoons extra virgin olive oil
2 tablespoons minced, fresh garlic
1 cup chopped, freshly rinsed basil leaves
Salt and fresh cracked pepper to taste
Fat-free bagel thins
Toss together chopped tomatoes, olive oil, garlic, basil leaves, salt and pepper to create a savory mixture. Place mixture in a serving bowl and serve as a topper with bagel thins.
