Spanish Orange Salad
This salad has a great sweet/sour dressing and is very good with mexican food.
1/4 cup oil
2 tbsp. wine vinegar
3/4 tsp. salt
1/2 tsp. corriander
1/8 tsp. pepper
3 medium oranges, peeled and sliced thin
1/2 cup thinly sliced red onion
8 cups crisp lettuce
1/2 cup ripe olives
Mix well first five ingredients. Pour over oranges and onion slices, toss and let stand at room temperature for 30 minutes. Add to greens and garnish with olives.
Note: I like to serve this salad on a large platter and arrange the orange slices and olives around the edge.
