My Mom's Potato Salad

MY MOM’S POTATO SALAD
My maternal grandmother gave Mom this recipe, and it has been a family
favorite for
years. Holidays and summer just aren’t complete without this potato
salad.

3-4 large white baking potatoes
Chopped onion, to taste
2 boiled eggs
1/3-1/2 tsp. celery seed or to taste
salt and pepper to taste
Miracle Whip
Sliced Stuffed Green Olives, to taste

Scrub potatoes and cook in boiling water. When done, remove from
water. Remove skin
and cube potatoes. Place in bowl. Add salt and pepper. Peel eggs.
Remove yolks from
whites. Dice egg whites and add to potato mixture. Mash yolks and mix
with 2-3 T.
Miracle Whip. Add this paste to potato mixture, and stir. If needed,
add small amounts
of Miracle Whip to entire potato mixture until it is desired
consistency. Add celery seed
and olives. Stir. Serve chilled. (My note: The olives and celery seed
are what give this
potato salad its delicious taste.)
