Lucy's Better Butter
This is from the MOMYS (Mother's of Many Young Siblings) digest (Joan's recipe). I haven't tried it, but have been "gonna". She even uses it to cook with, but not cookies. For better butter:
Bring one pound butter to room temp. I use a whisk attachment
on my mixer and whisk it. Add 2 cups oil (I use canola, but I'm
not an oil expert). Then in a small bowl, blend 1/4 cup dry milk
solids and 1/4 cup water. After completely dissolved, mix into
butter mixture. It will appear very soupy. Refrigerate until ready
to use. It will spread right out of the frig, but will turn to mush if
left out too long (and right after mixing a batch up).
