We eat this every day! This is definitely our favorite, and very versatile. *********************
Our Favorite Bread (sorry, I made it up, so there's no real name)Load the ingredients in order given:
8 oz water
1 tsp salt
3 tablespoons brown sugar
2 tablespoons margarine
1 tablespoon lecithin granules (optional)
1 1/2 cups wheat berries ground into flour (or about 2 1/4 to 2 1/2 cups ww flour I think)
1 cup white bread flour
2 tsp dry yeastI choose the "dough" setting on my machine. When it's done I shape it into a regular loaf -OR- 8 sandwich buns. You can bake this in your machine using the *light* setting. I don't like the whole wheat setting on mine because the crust gets too thick and hard.
Often I let the machine go until just after the fruit/nut beep, take the dough out and let it do its second rise in a bowl while batch #2 is making in the machine. Then you can bake 2 batches at once when they're all ready to go.
When the bread is finished baking, cool it 10 minutes wrapped in a clean kitchen towel, then put in an airtight container. The crust will be as soft as storebought! (and taste better!) *g*
You'll just have to play with the recipe and get the proportions right for your breadmaker.
