German Apple Cake

2 large eggs
2 C. sifted flour
2 tsp. cinnamon
1 tsp. soda
3 tsp. salt
1 C. salad oil
1 tsp. vanilla
2 C. sugar
1/2 to 1 C. pecans
4 C. apples, thinly sliced

Mix all ingredients together with a spoon; do not use mixer. Batter will be stiff. Spread into floured, greased 13x9x2-inch pan. Bake at 350 degrees for 45-60 minutes. Serve cake with whipped cream or frost with icing made by combining small package of cream cheese, 3 T. melted butter, 1 tsp. vanilla and 1 1/2 C. powdered sugar.
