Chicken/Green Bean/Potato Casserole
(This is my own creation -- a combination of good old Green
Bean Casserole and Au Gratin Potatoes, with chicken added to it. Normally I bake it in the oven, but I
could do this on the camp stove.)At home:
Cook 20 oz. green beans till nearly done. Mix with 1 can cream of mushroom soup, about 2 c. cubed,
cooked chicken, and ½ t. pepper. Freeze in ziploc.At camp:
1 box (5.5 oz.) au gratin potatoes
thawed chicken/green bean mixture
1 small can french fried onions
4 ¼ c. water
1 ¼ c. milk
2 T. margarineToss onion rings in a dry skillet or pot until golden. Set aside. Mix 4 ¼ c. water and dried potatoes in
a 4 qt. saucepan. Bring to a boil. Boil 10-14 minutes to desired tenderness. Drain excess water. Stir
in sauce mix, 1 ¼ c. milk, and 2 T. margarine. Heat to boil over medium heat, stirring frequently. Add
chicken/green bean mixture; cook and stir until heated through. Stir half the onion rings into the
mixture and sprinkle remaining onions on top. Serves 5-6![]()
