Lori's Roasted Tomato Soup 3 lbs. tomatoes, cored
1/3 c. olive oil, divided
6 garlic cloves, minced
2 T. chopped fresh thyme or 2 t. dried thyme
2 c. chopped onion
1/4 c. minced fresh basil or 1 t. dried basil
1 can (14 1/2 oz) chicken broth or 2 c. homemade broth
1/2 c. half and half
salt and pepper to tastePut tomatoes in roasting pan; drizzle w/ 1/4 c. olive oil. Sprinkle with garlic and thyme. Bake, uncovered, at 350 degrees for h hour, turning occasionally. In large pot, saute onion in remaining oil til soft. Add tomatoes and basil; cook 5 minutes. Add broth; bring to a boil. Cook and stir 5 minutes. Put through a sieve or food mill; return puree to pan. Warm cream (do not boil) and stir into soup with salt and pepper. Serves 4-6.
