MAC's Gooseberry Pie
I aim for all the berries to have some pink on them--some will just be started and some will be all pink. I only have three bushes, so I can't pick all of them at the same ripeness.
Stem and wash 3 C gooseberries, crush 1/2 C. Mix crushed berries with 1 and 1/2C sugar, 3 T tapioca. Cook and stir until bubbly, cook 2 more minutes (a bit longer at high altitude) Add remaining whole berries. Fill unbaked pie crust (9 inch) Put on top crust, Bake 400 for 35 minutes. It usually runs over (like rhubarb) in the oven, so put something below it.
