Chili Mac
1/2 # ground beef;
1 small onion, chopped;
1/2 med. green pepper, chopped;
Cooking oil;
1 c. macaroni;
1 8-oz. can kidney beans;
1 8-oz. can tomato sauce;
1/2 c. water;
1/2 tsp. chili powder;
1/2 tsp. salt;
1/2 c. shredded cheddar cheese.
Brown ground beef, onion and green pepper in small amount of oil in large heavy skillet. Drain off fat; add macaroni, kidney beans, tomato sauce, water, chili powder and salt to skillet. Cover; simmer for 15 minutes, stirring occasionally. Top with cheese; heat until cheese is melted. Yields 2-3 servings. (This recipe can be easily doubled if needed.)
