"Pumpkin Seeds"
From the October, 1998, issue of _Southern Living_.
Toasted Pumpkin Seeds
1 cup fresh pumpkin seeds
1 1/2 teaspoons vegetable oil (may sub cooking spray)
1 teaspoon dried oregano or dried mint flakes
Toss together pumpkin seeds and oil. Place on an aluminum foil-lined baking sheet; sprinkle with oregano.
Bake at 325 degrees for 15 minutes or until crisp and browned, stirring every 5 minutes. Serve immediately, or store in an airtight container. Yield: 1 cup

Another Toasted Pumpkin Seed Recipe
Salted:
Heat oven to 250 degrees. Put 2 cups washed and dried pumpkin seeds in a jelly-roll pan. Toss with 1 tsp olive oil and 1/4 tsp salt. Spread in a single layer and bake, stirring occasionally, 50-60 minutes until toasted.
Chili-Coated
Proceed as above, adding 1 tsp chili powder and 1/4 tsp ground red pepper to the salt.
Parmesan:
Proceed as above, adding 2 T. Parmesan cheese and 1/4 tsp. garlic powder to the salt.
