BarbC's Hot Pepper Jelly
Hot Pepper Jelly
Slice peppers and take out seed - do NOT gwt hot pepper in your eyes!
Grind 3/4 c. bell pepper & 1/4 c. hot pepper
Add to this 6 1/2 c. sugar & 1 1/2 c. cider vinegar in a large pot.
Bring to a full boil.
Add 1 bottle Certo & bring to a boil.
Pour into Jelly glasses and seal.
(I forgot to ask Mom how much this makes - sorry!)
Ways to use Pepper Jelly:
Score a ham and pour a jar over to glaze.
Serve with various meats as condiment.
Serve over cream cheese on crachers - I ereally like it on wheat crackers.
Mom colors her jelly - some red and some green. At Christmas she puts out a block of cream cheese and pours jelly on top. It is really pretty and very very good! Also, we make ours in small jars - pint and half-pints to give as gifts.
