DanaO's Keeper Yogurt Chicken
Here's a great recipe using yogurt. We had this last night and the whole family voted for it to be on the "keeper" list.
Brown skinless, boneless chicken breast strips in a little olive oil.( I used approx. 3 chicken breasts)
Add 1 cup lemon yogurt, 4 tsp. creamy peanut butter, 2 tsp. curry powder and 1 small chopped onion. Mix together and pour over chicken. Cover and simmer 10-15 minutes.
I served this over rice along with some steamed veggies and a salad. Yum~! It fed 5; 2 adults, two teenagers, and a 9 year old.
If you really want to get fancy you could top it with some toasted coconut, chopped scallions, and/ or chopped roasted peanuts. A little Major Grey's Mango Chutney on the side would be even better.
