
Pea-Picking Cake

This is a slightly unusual, but utterly delicious cake, that my husband's granny gave to me a few years ago; it's an old Florida recipe that people loved to eat for dessert after they had been picking peas all day in the hot sun! (has been modified to allow for convenience)
LAYERS:
1 box butter recipe yellow cake mix
4 eggs
1/2 c. oil
1 sm. box frozen strawberries WITH liquid (thawed)FROSTING:
1 8-oz. carton Cool Whip, thawed
1 box frozen strawberries, thawed
1 small box instant vanilla pudding
To make layers: Mix cake mix and other ingredients; pour into 2 9" greased/floured cake pans. Bake at 350 degrees for 20-30 minutes; cool for 10 minutes, then remove from pans and let cool on a cooling rack.To make frosting: Mix pudding mix and strawberries WITH liquid; fold in Cool Whip.
Spread on cake and REFRIGERATE.
My family absolutely loves this cake and it is good eatin' in the summertime, especially if you make it first thing in the morning before it is so hot outside!
