Quick, Main-Meal Beef and Vegetable Soup

Ingredients Needed:

1 lb. ground beef
1 large onion
1 large can tomatoes
3 or 4 16-oz. bags frozen vegetable soup mix

You will need a large pot for this; a dutch oven will probably do. This will make enough to feed a family of 8, possibly with leftovers, especially if you have a pan of cornbread on the side to go with it!

Chop the large onion; cook it together with the ground beef in a pot that has been sprayed liberally with no-fat cooking spray. You may season with salt and pepper, or any seasonings you desire.

After beef is brown and onion is transparent, pour off the excess fat.

Pour off the juice, from the large can of tomatoes, into a quart-size measuring cup; add enough water to make 4 cups of liquid.

Add the 4 cups of liquid to the beef/onion mixture in pot; bring to a rolling boil.

Add the 4 bags of vegetable soup mix.

Bring to a boil again, then simmer for one hour. Chop the tomatoes and add to the soup mixture now, or later, if you prefer.

I always cook a pan of cornbread while the soup is simmering.

This is one of my family's favorite meals, especially if the weather is cold/rainy.
