Lori's Scotch Shortbread

4 c. flour
2 c. butter
1 heaping c. 10X sugar
pinch salt
1 t. vanilla

Blend all ingredients together with your hands until smooth and creamy. Chill dough; roll and cut out in
shapes. Place on ungreased cookie sheets and bake at 400 degrees until light brown at edges, 5-10
minutes. Yields about 50 cookies.

Variation (my favorite): Roll dough into balls the size of a jawbreaker. Bake at 325 degrees for about
14 minutes. When cool, dip tops into a glaze of 1 1/2 c. 10X sugar and 3 T. lemon juice. Yields about
35 cookies.
