These are pretty unique - not exactly like you would think of when you think soda crackers (like saltines) --- these are kinda more like wheat thins with an attitude. *G*

"Wheat Thicks" (that's what dh calls 'em - he loves 'em!)

(a.k.a. "Whole-Wheat Crackers" from p. 199 The Tightwad Gazette II by Amy
Dacyczyn)

1 1/2 cups whole wheat flour
1 1/2 cups white flour
1/4 cup sugar
1 tsp salt
1/2 teaspoon baking soda
1/2 cup margarine
3/4 cup buttermilk
1/4 cup wheat germ

Her directions:
Sift the first five ingredients together. Add the margarine and process in food processor. Add the buttermilk, and process until it forms a ball.
Set it aside for 10 minutes. Cut the dough into four parts. Grease cookie sheets and sprinkle them lightly with wheat germ. Roll each dough piece out on a cookie sheet. Sprinkle with salt. Cut into diamond shapes with a pastry wheel. Bake at 350 degrees for 20-25 minutes. Cool and put in a covered container.

My modified directions:
Sift the first five ingredients together (we use fresh ground ww pastry flour). Add the margarine and process in food processor. Add the buttermilk, and process until it forms a ball.
Roll out each dough section on floured counter. Sprinkle with salt and wheat germ. Cut into squares with a pizza cutter. Use a spatula to
transfer to baking sheet. Bake at 350 degrees for 20-25 minutes. Cool and put in a ziploc bag.
