Homemade chicken nuggets
2 pounds boneless, skinless chicken breast, cut into chunks (if frozen I defrost and even allow it to cook a bit in the micro, easier to cut this way).
Dip chunks in ranch dressing then roll in this mixture:
1 1/2 c. flour
1/2 c. grated Parmesan cheese
1/2 tsp. garlic powder
shake in some pepper
Fry in a skilled coated with a thick coating of oil, both sides. Drain and serve with more ranch dressing or ketchup.
