AnnWu's Fried Rice
leftover rice (at least 1 day old so it won't be mushy)
frozen peas or peas/carrots combination
diced cooked meat (deli ham, spam, chicken, pork, etc.)
1 scallion, cut in small pieces
soy sauce optional
In a wok or deep frying pan, cook the cooking oil for a few second. Add the meat and stry fry for 1-2 minute. Add peas to the pan and stry fry for another minute. Set aside. Scramble the egg and set aside. Add more oil and stry fry the rice until fragrant. Add oil as needed. Next add the scrambled egg and break into small pieces into the rice. then add the meat, peas, salt and scallion pieces stir frying unyil fragrant.
