Baked Chicken with Garlic
This is from the Frugal Gourmet.
Put a whole chicken in a baking dish. Season to your taste (salt, pepper, etc) inside and out. Inside and around the chicken put several unpeeled garlic bulbs. Yes, that is bulbs, not cloves. I use at least 20 medium sized cloves. Break them up into the individual cloves, but you do not have to peel them. I cut the stem end off. Add 1c white wine or water. Bake in a 350 degree oven 45-60 minutes. Take the garlic and sqeeze the cloves out of the peels. Mash the garlic and spread on French bread. If you are a garlic lover, it is wonderful.
The old lemon inside a chicken is good too.
