GRAPENUT BREAD PUDDING

(Serves 8)

½ cup Grapenuts cereal
6 slices multi-grain bread, cubed
¼ cup raisins, if desired
2 cups skim milk
1 cup egg substitute
½ cup sugar
1 heaping teaspoon vanilla
1 teaspoon ground cinnamon

Preheat oven to 350 degrees. Lightly grease or spray an
8-inch square baking dish. Sprinkle half the Grapenuts over
bottom of dish.

Evenly place the bread cubes over the Grapenuts. Sprinkle
remaining Grapenuts and raisins over the bread.

In a separate bowl, stir together milk, egg substitute, sugar,
vanilla and cinnamon. Pour evenly over bread mixture. Set
dish in pan filled with an inch of hot water.

Bake until set, up to 1 hour. Do not over bake.

Serve warm or cold with Cool Whip, if desired.
