Mixed Beans
1lb. each:
Navy
great Northern
pinto
red
soybeans
baby limas
yellow split peas
black-eyed peas
dried lentils
large limas
barley pearls
Makes 20 two cup packagesBean Soup
2 cups mixed beans
2 qt. water
1 ham hock or 2 cups somked sausage
1 1/4 teaspoon salt
1/2 teaspoon pepper
1 large onion, chopped
1/4 teaspoon chili powder
1 16 oz. can tomatoes
1 clove garlic, minced
3 table spoons lemon juiceWash beans and place in a Dutch oven. Cover with water and soak overnight. Drain the
beans and add the water, ham hock, salt and pepper. Cover and bring to boil. Reduce
heat and simmer 1 /12 hours or until tender. Add the remaining ingredients. Simmer 30
mintues stirring occasionally. Serve with homemade bread or cornbreadNola(TX)
