Amber's Sweet Cinnamon Quick Bread

This a great loaf of cinnamon bread. It pours into the loaf pan and when baked has the consistancy of bread.
2 C. All purpose flour
4 tsp. baking powder
1 1/2 tsp. cinnamon (i ad extra)
1 1/4 salt
*1 C. buttermilk
1/3 C. oil
2 tsp. Vanilla
2 eggs

Grease and flour BOTTOM of loaf pan. Heat oven to 350*.

In a large bowl combine all ingredients and beat 3 minutes at medium speed. Pour batter into prepared pan.

STREUSEL
2 TBS sugar
1 tsp cinnamon
2 tsp butter

in a small bowl mix above ingredients until crumbly, sprinkle over batter and swirl lightly to marble. Bake for 45-55 minutaes or until toothpick inserted in center comes out clean. Remove from pan immediately. cool completely before slicing (yeah right) Makes 1 loaf.

*to substitute for buttermilk for any recipe: put 1 TBS vinager or lemon juice into milk to equal one cup. Stir around and add to recipe.
