Here is my tried and true, adjusted, re-adjusted, and perfected fave-o-rite recipe. We make this several times per week.
I always use the dough cycle and then bake my bread in the oven - I like the horizontal loaves. Since they don't have to fight so hard against gravity, they rise better.
8 oz water
1 tsp salt
3 tablespoons brown sugar
1 1/2 tablespoons lecithin granules
1 tablespoon olive oil
1 cup bread flour
2 cups whole wheat flour (we use freshly ground -- grind 1 1/2 cups wheat)
2 tsp. yeast.
