Topic/Question: Substitutions for Evaporated Milk in LIBBY'S Famous Pumpkin Pie/Pie Mix

Answer:

- LOWFAT EVAPORATED MILK: Produces acceptable results, however the texture will be slightly different.

- FAT FREE or SKIMMED EVAPORATED MILK: Produces acceptable results, however the appearance (color), taste and texture will be different.

- WHOLE MILK: Produces acceptable results, however the texture will be slightly different.

- FAT FREE, SKIM OR NONFAT MILK: Color of pie is brown, not orange, spices are more pronounced. Produces acceptable results, however the appearance (color), taste and texture will be different.

- NONFAT DRY MILK, RECONSTITUTED WITH WATER: Color of pie is more brown than orange -- light brown color. Produces acceptable results, however the appearance (color), taste and texture will be different.

- SWEETENED CONDENSED MILK: Produces acceptable results, however the pie texture will be very firm, and the taste will be slightly sweeter. Omit the sugar from the recipe.

- LACTAID® NONFAT MILK: NOT recommended. The pie has a very wet appearance and the texture is too soft, mushy.

- COFFEE-MATE®: Color of pie is darker and texture is less creamy. Reduce spices to taste and add 1 Tbsp. cornstarch to sugar.

- MOCHA MIX: Color of pie is darker and texture is less creamy. Add 1 Tbsp. cornstarch to sugar.

- VITASOY®: Produces an acceptable pie, however color is darker. Add 1 Tbsp. cornstarch to sugar.
