Marilyn M's Mom's Chocolate Sheet Cake
My mom's recipe:
Combine in large bowl (My mom sifts, but I don't):
2 c. flour
1/2 tsp. baking powder
2 c. sugar
1 stick butter or margarine
1/2 c. oil
1 c. water
Bring to a rolling boil and pour over dry ingredients in above bowl. Stir well and add:
1/2 c. buttermilk (I use just milk, but you can add 1/2 tsp vinegar to milk)
2 eggs, beaten well
1 tsp. soda
1 tsp vanilla
1/4 tsp. salt
Mix and pour into slightly greased jelly-roll pan. Bake 20 min in 400 oven.
About five minutes before cake is done make icing.
Bring the following to a boil.
1 stick butter/margarine
2 T. cocoa
6 T. milk
Then set aside and add:
1 box powdered sugar (3 1/2 cups)
1 c. chopped pecans
1 tsp. vanilla
Mix well and spread over hot cake.
