Flamingo Sherri's Eggplant Lasagna

I slice peeled eggplant (but you don't have to peel it) in thin slices, dip in egg and then flour with spices in it.
I fry them in grapeseed oil (it's what I use instead of EVOO) and drain them on paper towels. Or you can bake them.
We eat some with a little salt for lunch and then I make lasagna.

You can layer it like the back of the box says or follow any cheese lasagna recipe. I just add a layer.

As you can tell, i make it double high. You don't have to. just stop with a noodle layer with sauce on top, then parmesan

I also usually make one for eating and one for freezing at the same time. My motto is cook once, eat twice.
