Butternut is my favorite. I have:
- chunked it up and cooked it (unpeeled) in water and run it through a seive (peel stays in the seive). You can mash it and eat it like that, or use it as you would for any pumpkin recipe.
- cut it in half and baked it upside down on a baking sheet and scooped out the innards.
- or, our favorite, cut it in have, scoop out the seeds. Mix up some meatloaf - anyway you like it, or just plain hamburger and make two balls. Put the meatloaf balls into the seed holes. Place the squash in a baking dish with a little water in the bottom. Cover with foil and bake/steam for an hour or so until squash is done and meat is done.
