Olive Garden's Hot Artichoke-Spinach Dip
1 cup diced artichoke hearts (frozen or canned, not marinated)
1/2 cup frozen, chopped spinach
8 oz cream cheese
1/2 cup grated Parmesan cheese
1/2 tsp crushed red pepper flakes
1/4 tsp salt
1/8 tsp garlic powder
dash ground black pepper
Put artichoke hearts and spinach in a microwave safe bowl and cut a slit in the top of the plastic wrap to let steam out, microwave on high for 4 minutes. Stir and zap again for 2-3 minutes. (or boil over med heat in 1 cup of water for 10 min) Drain in a colander.
Heat cream cheese in microwave for 1 min or heat on stove on med until hot.
Add artichoke and spinach to cream cheese, stir well.
Add remaining ingredients and stir well
*you can use reduced fat cream cheese
Serve with crackers, chips or toasted bread
