Lori's Doctored Up Baked Beans serves 12
a few slices bacon, as desired -- I use about 4
1 onion, diced
2 big-ish cans baked beans, any style (not the 15 oz., but not the enormous ones either -- I think these have six 1/2 cup servings each)
1/2 c. ketchup
2 T. mustard, any style
1/4 c. vinegar, any style
1/3 c. brown sugarCook the bacon in a large skillet until mostly crisp; drain and reserve the drippings in the pan. Saute the onions in the drippings until tender but not brown (unless you get distracted and brown them, in which case you say aloud, "Oh, I'm in the mood for baked beans with browned onions today.") Stir in the remaining ingredients, including the bacon which you've crumbled, and bring to a simmer. If you are in a hurry, serve from the skillet. If you have some time, transfer to a baking dish and bake in the oven -- long and low or short and high, as needed. I like to bake mine at 350 degrees for an hour or so, but this dish's name is Flexibility! You can also dump them in a crockpot, of course. Amounts are approximate -- I never measure this.
