Lemon Poppy-Seed Pound Cake 1/2 cup butter
1 cup sugar
1/2 tsp vanilla
2 Tablespoons lemon juice
3 eggs
1/2 cup lemon yogurt
1 1/2 cups flour
1/4 tsp baking powder
1/8 tsp baking soda
1 tsp grated lemon peel
2 Tablespoons poppy seedBeat butter on medium to high speed for 30 seconds. Gradually add sugar, beating until light and fluffy. Add vanilla and lemon juice. Add eggs, one at a time, beating after each addition.
Combine dry ingredients and lemon peel. Add alternately to batter with sour cream, beating after each addition until just combined. Pour into a greased and floured loaf pan, bake at 325 for 60-75 minutes or until a toothpick comes out clean.
