Cauliflower Popcorn Preheat oven to 425 degrees. Trim one head of cauliflower into florets about the size of golf balls. Don't worry if some are smaller -- they'll delight the "darker the better" eaters. Spray a large cookie sheet with cooking spray (lined with foil first for easy cleanup, if desired). Dump the florets on the cookie sheet. Drizzle with 1/4 c. olive oil. Sprinkle fairly generously with salt (about 1 t.) and lightly with pepper. Toss with your hands to coat well. Spread out into a single layer. Bake in the middle of the oven for 1 hour, turning the cauliflower 3-4 times during the baking. You want to get a nice even golden brown color all over it. The darker golden you go, the more the sugars in the cauliflower have caramelized and the sweeter and yummier it tastes -- just don't burn it. Taste for seasoning and add more salt, if desired. You may enjoy this a little saltier than your average steamed veggie. Watch out -- you may just convert a cauliflowerphobic with this one!
