DanaO's Pineapple Ice Cream
This recipe if for a 6 quart container
2 3/4 c. sugar
3 T. flour
1 gallon milk, 2% or whole, note: you will not use all of it.
1/2 pt. whipping cream
1 pt. 1/2 n 1/2
1/2 pt. table cream
Flavor with 10 oz. crushed pineapple, and 4 T. vanilla
Directions: Put 1 3/4 c. sugar in 10" heavy skillet. Turn on low heat and brown sugar, stirring constantly and watching closely until lightly browned. Gradually add approx. 5 cups milk to browned sugar. Stir until sugar is dissolved again over low heat.
In a separate bowl, whisk 3 eggs, and 1 c. sugar, 3 T. flour. Mix well and add 2 T. milk to mixture. Add egg mixture to milk and sugar mixture which is still over heat. Cook on medium heat till thickened, stirring constantly. The consistency will be pudding-like.
Transfer to another bowl and cool thoroughly in refrigerator.
Pour mixture into ice cream maker. Add flavorings, creams 1/2 n 1/2, and milk to the fill line.
Place ice cream dasher into container and close with lid. Follow your directions for your ice cream maker.
