Iron Skillet Breakfast
Peel as many as six potatoes and chop onion to suit your family's taste. Add shortening to a seasoned iron skillet. Put on grate over a medium campfire that has burned down some. When grease has melted, add potatoes and onion. Cover and cook for fifteen minutes. Check potatoes and when they are brown on the bottom, turn by sections onto top side. Leave uncovered and cook till the bottom is browned. Add six eggs and stir with spatula until eggs are cooked. Remove from heat, cover mixture with shredded cheddar cheese, cover with lid and let set for a couple of minutes. Serve with flour tortillas and salsa or buttery biscuits. Mmmm. Tammy, Indiana
