Gettip's Company Chicken (freezable)
5 BL/SL chicken breasts cut into thin strips
2 TBS olive oil
2-3 cloves of garlic, finely chopped
1 large onion, chopped
3 cups fresh diced mushrooms
1 can cream mushroom soup (I know Leanne this is a no-no)
1 cup sour cream
½ cup cooking sherry or white wine
¼ cup soy sauce.
1 TBS fresh dill (optional)
Sauté chicken, onion and garlic in olive oil. Add mushrooms and cook until tender. In a separate bowl mix soup, sour cream, white wine, and soy sauce. Pour into chicken mix and simmer for 10-15 minutes. Add fresh dill at the end if desired. (I hav not ever used the dill so I cannot say how it does)
Serve over brown rice. SOOO YUMMY! And this seems very fancy to people with very little work. I make 2-3X’s the recipe and freeze the extra in portions.
