Gettip's Corn and Potato Chowder
Corn and Potato Chowder
1 lb. bacon browned and set aside. (save bacon drippings)
1 large onion, chopped
2-3 cloves of garlic, finely chopped
4-6 large potatoes, cubed in 1 inch pieces
2 cups water
1 can cream mushroom soup + 1 can half and half
1 8oz package frozen corn
salt and pepper to taste
Use 2-3 TBS of bacon dripping to sauté onion and garlic until tender. Add potatoes, water, and salt and cook until tender. Add soup, half and half, corn and more salt and pepper to taste. Bring almost to a boil, simmering gently until serving time. Crumble bacon and add to pot right before serving.
Serve with thick sourdough bread. YUMMY!!!!!!!!!!!!!!!!!
Leftovers can be frozen.
