Mock Potato Salad
Prep Time: Ready in 20 minutes
Carbohydrate count: 4g per serving
1 (16-ounce) bag frozen cauliflower
4 hard boiled eggs, diced
2 ribs celery, sliced
1/4 cup onions, chopped (2 slices)
1 tablespoon Dijon style mustard
4 tablespoons mayonnaise
Salt, pepper, dill to taste
1. Cook cauliflower in microwave until soft, but not mushy. Drain well.
2. Let cool and cut into small pieces. Mix with other ingredients. Chill 2 hours and serve.
