Buffalo Chip Cookies
In a mixer:
Cream:
2 C. margarine or shortening
2 C. sugar
2 C. brown sugar
4 eggs
1 tsp. vanillaAdd:
4 C. flour
1 tsp. salt
2 tsp. baking soda
2 tsp. baking powderSet aside above mixture.
In a LARGER bowl, combine:
2 C. dry oatmeal
2 C. corn flakes
1 C. coconut
1 C. chopped nuts (she always uses pecans)
1 large package of chocolate chipsStir by hand.
Add creamed mixture to the above dry mixture and mix by hand. (She said she generally has to use her hands for this part of the recipe.)
Drop by teaspoonful onto an ungreased cookie sheet.
Bake at 350 degrees for 8 minutes or until light brown.
Cool before removing from cookie sheet. Makes 100 cookies.

Colossal Cookies (her favorite)
No flour and her regular mixer will do all of this recipe:
Cream:
1 stick margarine
1 1/2 C. sugar
1 1/2 C. brown sugarBlend in:
4 eggs
1 tsp. vanillaAdd:
2 1/2 tsp. baking soda
18 oz. jar of crunchy peanut butterAdd:
6 C. dry oatmeal
6 oz. semi-sweet chocolate chipsMix well and drop by spoonful onto an ungreased cookie sheet. Flatten with a fork or fingers.
Bake at 350 degrees for 9-10 minutes. Don't let them get too dark. Cool 1 minute before removing from cookie sheet.
Makes 75-80 cookies.Shared by Carol
